Drožďová Polievka, or yeast soup, is a classic Slovak dish that combines simple ingredients into a warm, comforting meal. This recipe takes me back to my childhood, where the aroma of sautéed onions and yeast filled our kitchen, reminding me of my mother’s care and love.
This traditional soup is quick, hearty, and perfect for any day you crave a touch of nostalgia. Made with fresh yeast, lard, and alphabet pasta, it’s a dish that carries the flavors of Slovak heritage.
Ingredients for Slovak Yeast Soup:
- 30 g fresh yeast
- 2 tablespoons lard
- 2 tablespoons plain flour
- 1 small onion, finely chopped
- 1 liter water (or vegetable broth)
- 1 teaspoon ground caraway seeds
- 1/2 teaspoon sweet paprika
- Salt to taste
- 50 g alphabet-shaped pasta (or any small pasta)
- 2 eggs
How to Make Drožďová Polievka:
1. Sauté the Onion
Melt the lard in a pot over medium heat. Add the finely chopped onion and sauté until golden and fragrant, releasing a delicious aroma.

2. Prepare the Yeast Base
Crumble the fresh yeast into the pot with the onions. Stir constantly until the yeast dissolves and lightly browns.

3. Make the Roux
Add the plain flour and mix well, creating a smooth roux. Cook for 1–2 minutes to remove the raw flour taste.
4. Add the Liquid
Slowly pour in water or vegetable broth, stirring continuously to prevent lumps. Bring to a boil.
5. Season the Soup
Add ground caraway seeds, sweet paprika, and salt. Allow the soup to simmer gently for 5–7 minutes to develop the flavors.

6. Add the Pasta
Stir in alphabet-shaped pasta and cook according to package instructions until tender.
7. Add Egg Ribbons
Whisk the eggs in a small bowl. Slowly pour them into the simmering soup while stirring to create delicate ribbons.

8. Serve Hot
Ladle the soup into bowls and serve with fresh bread or rolls for a complete meal.
